Description

  • 1 small onion, finely diced
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon onion powder
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 cup shredded cheddar or American cheese
  • 1/4 cup finely chopped dill pickles

For Wrapping and Sealing

  • 12 spring roll wrappers (thawed if frozen)
  • 2 tablespoons flour
  • 3 tablespoons water (mixed with flour into a paste for sealing)

For Cooking

  • Oil for frying (enough for 2 inches in pan) or oil spray for air frying

Dipping Sauces (Optional)

  • Mix of ketchup and mayonnaise
  • Sweet chili sauce and sour cream

Instructions

  1. Cook the Filling: Heat a skillet over medium-high heat. Add the ground beef and finely diced onion and cook until browned and edges are crispy, about 7 minutes. Drain all the grease from the pan.
  2. Season the Meat: Stir in ketchup, yellow mustard, Worcestershire sauce, garlic powder, onion powder, kosher salt, and freshly cracked black pepper. Cook for an additional minute then remove from heat and let cool for 5 minutes.
  3. Add Cheese and Pickles: Mix in the shredded cheddar or American cheese and finely chopped dill pickles until evenly combined.
  4. Prepare Wrappers: Keep spring roll wrappers covered under a damp towel to prevent drying out. Lay one wrapper flat on a clean surface.
  5. Fill and Roll: Place about 2 tablespoons of the cooled filling in the center of each wrapper. Fold the sides inward tightly and roll up like a burrito. Seal the edges using the flour and water paste to ensure they stay closed during cooking. Avoid overfilling to prevent bursting.
  6. Fry the Rolls: Heat 2 inches of oil in a deep skillet to 350°F. Fry 3 to 4 spring rolls at a time for 3 to 4 minutes until golden brown. Drain on paper towels to remove excess oil.
  7. Or Air Fry the Rolls: Alternatively, spritz the sealed rolls with oil spray and air-fry at 390°F for 12 minutes, flipping halfway through, until crispy and golden.
  8. Serve: Serve the hot spring rolls with your choice of dipping sauces such as a ketchup and mayonnaise mix or sweet chili sauce paired with sour cream.
  9. Freeze for Later: To freeze, place uncooked rolls on a parchment-lined tray and freeze until solid. Transfer to a zip-top bag and store. When cooking from frozen, add 1 to 2 minutes to the frying or air frying time.
