Description

A light and flavorful Zucchini Shrimp Scampi recipe featuring tender shrimp sautéed with garlic, butter, and white wine, served over fresh zucchini noodles for a low-carb, delicious meal.

Ingredients

Scale

Vegetables

  • 4 medium zucchinis, cut into zoodles
  • 5 cloves garlic, minced
  • parsley, chopped (for garnish)

Seafood

  • 1 lb large raw shrimp, peeled and deveined

Oils and Fats

  • 2 tbsp olive oil
  • 3 tbsp unsalted butter

Liquids

  • 1/2 cup white wine
  • 1/2 large lemon, juiced

Spices and Seasonings

  • 1/4 tsp crushed red pepper flakes, plus more for serving
  • salt and pepper to taste

Dairy

  • grated parmesan cheese (for serving)

Instructions

  1. Prepare Zoodles: Cut the zucchinis into spiral noodles using a spiralizer or vegetable peeler. Set aside.
  2. Sauté Aromatics: Heat the olive oil and butter in a large skillet over medium-high heat. Add the minced garlic and crushed red pepper flakes, cooking for 1-2 minutes while stirring frequently until fragrant but not browned.
  3. Cook Shrimp: Add the shrimp to the skillet and cook for 4-5 minutes, stirring occasionally, until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  4. Deglaze Pan: Pour the white wine into the skillet, scraping up any browned bits from the bottom with a wooden spoon. Allow the wine to reduce slightly by cooking for 2-3 minutes.
  5. Combine and Heat Through: Return the zucchini noodles and shrimp to the skillet. Cook for about 2 minutes until the zoodles soften slightly and the shrimp are warmed through. Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.
  6. Serve: Plate the dish immediately and garnish with grated parmesan cheese, extra crushed red pepper flakes, and chopped parsley if desired.

Notes

  • Use a spiralizer to create zucchini noodles easily or a vegetable peeler for broader ribbons.
  • Be careful not to overcook zucchini noodles; they should be tender but still retain some bite.
  • Substitute white wine with chicken broth or vegetable broth if preferred or to keep it alcohol-free.
  • For extra flavor, add a splash of garlic-infused olive oil or a pinch of smoked paprika.
  • If avoiding dairy, omit parmesan cheese or replace with a vegan alternative.
  • Ensure shrimp are properly peeled and deveined for the best texture and taste.
