Instructions

  2. Add Aromatics and Seasonings: Stir in the minced garlic, Italian seasoning, salt, pepper, and red chili flakes. Cook for 1 minute to release the flavors without burning the garlic.
  3. Add Broth and Chicken: Pour in the low-sodium chicken broth, then add the whole boneless skinless chicken breasts along with the chopped sun-dried tomatoes. Increase the heat to medium-high and bring to a simmer.
  4. Simmer Chicken: Once simmering, cover the pot and reduce heat to medium-low. Let cook for 12 to 15 minutes until the chicken is fully cooked and reaches an internal temperature of 165°F.
  5. Cook Pasta: While the soup simmers, bring a large pot of salted water to a boil and cook the dry short pasta or broken lasagna noodles according to package instructions. Drain and set aside.
  6. Shred Chicken: Carefully remove the chicken breasts from the soup and shred them using two forks.
