  • 1 1/2 cups cubed watermelon, plus a small wedge for garnish
  • Ice
  • 2 tablespoons freshly squeezed lime juice, plus more for the glass rim
  • 2 tablespoons agave nectar
  • 1 tablespoon coarse salt
  • 1/2 teaspoon Tajin seasoning
  • Lime wheel, for garnish

Instructions

  1. Blend Watermelon: Place the cubed watermelon in a blender or food processor and blend until it liquifies. Strain through a fine mesh strainer to separate the juice from any chunks of melon. Pour the juice into a cocktail shaker filled with ice.
  2. Mix Ingredients: Add 2 tablespoons of the lime juice and the agave nectar to the shaker and cover. Shake until the ingredients are well mixed and chilled.
  3. Prepare Glass Rim: Place lime juice on a small saucer or plate. On a separate small plate, combine the coarse salt and Tajin seasoning. Dip the rim of a rocks glass in the lime juice, then into the seasoning mixture to coat the rim evenly.
  4. Assemble Drink: Pour ice into the prepared glass, then pour the watermelon mixture over the ice. Garnish with a small wedge of watermelon and a ring of lime on the rim.
