Bread and Spread
- 1 loaf white bread cut from the end of the loaf
- 3 Tbsp melted vegan butter
- 4 Tbsp maple syrup
- ½ tsp cinnamon
Fruit Topping
- 1 cup mixed berries
- 1 Tbsp maple syrup
Ice Cream
- 1 scoop vanilla vegan ice cream mixed with grated ginger to taste
Instructions
- Prepare the Bread: Cut out the center part of the bread loaf, leaving walls at least 1.5 cm thick to form a box. Cut the removed bread into 1-inch cubes.
- Melt Butter and Maple Syrup: In a pan, combine the melted vegan butter and 3 Tbsp maple syrup. Cook for 1-2 minutes to combine flavors.
- Set Aside Mixture: Transfer the butter and maple syrup mixture to a bowl, reserving 1 Tbsp in the pan.
- Fry Bread Cubes: Add the bread cubes to the pan with the reserved butter and maple syrup. Fry until golden brown and crispy on all sides.
- Brush Bread Box: Use the reserved butter and maple syrup mixture to brush the inside and outside of the hollowed bread box thoroughly.
- Bake Bread Box: Place the bread box in an oven preheated to 200 degrees Celsius (390 degrees Fahrenheit) and bake for 15 minutes until golden and crispy.
- Cook Berries: In a pan, combine the mixed berries with the remaining 1 Tbsp maple syrup. Cook for 3-4 minutes until the berries are slightly softened and syrupy.
- Assemble Toast: Fill the toasted bread box with alternating layers of the cooked berries and fried bread cubes.
- Add Ice Cream and Cinnamon: Top the assembled toast with the scoop of vanilla ice cream mixed with grated ginger and sprinkle with cinnamon.
- Serve Immediately: Serve within 10-15 minutes of assembling to enjoy the perfect contrast of warm toast and cold ice cream.
Notes
- Leave the bread walls at least 1.5 cm thick when hollowing to maintain structure.
- Remove bread cubes from oven 10 minutes before removing the toast box itself to prevent overcooking.
