White Fudge Layer
- 1 1/4 cups white chocolate chips
- 1/3 can sweetened condensed milk (about 4 1/2 ounces)
- 1 tablespoon unsalted butter
Decoration
- 1 tablespoon heart-shaped sprinkles
Instructions
- Prepare the pan. Line an 8 x 8-inch square pan with parchment paper or sprayed aluminum foil for easy removal and cleanup.
- Make the red fudge base. In a microwave-safe bowl, combine 2 1/4 cups white chocolate chips, 2/3 can sweetened condensed milk, and 2 tablespoons butter. Microwave in 20-second bursts, stirring after each, until melted and smooth, about 2 minutes total. Stir in 10 drops of red food coloring until evenly mixed and smooth.
- Set the red fudge layer. Spoon half of the red fudge mixture into the prepared pan and smooth with a spoon, carefully working the sticky fudge into place. Freeze for a few minutes to set. Keep the remaining red fudge warm by wrapping the bowl in towels.
- Prepare the white fudge layer. Combine 1 1/4 cups white chocolate chips, 1/3 can sweetened condensed milk, and 1 tablespoon butter in a microwave-safe bowl. Repeat microwaving and stirring in 20-second bursts until melted and smooth, about 2 minutes. Pour the white fudge over the set red layer and smooth the surface. Return to the freezer for a few minutes until firm.
- Finish with the top red fudge layer. Warm the remaining red fudge until stirrable and spoon it evenly over the white fudge layer. Smooth the top, cover with plastic wrap, and chill in the refrigerator for 2 hours to fully set.
- Cut hearts and decorate. Using the parchment paper, lift the fudge from the pan and place on the countertop. Using a small heart-shaped cookie cutter, cut out heart shapes efficiently to minimize waste. Sprinkle heart-shaped sprinkles evenly over the hearts and serve.
Notes
- Store fudge in an airtight container in the refrigerator for up to two weeks; allow to come to room temperature before serving for a softer texture.
- Freeze fudge wrapped in parchment paper and aluminum foil for up to 2 months for longer storage.
- Use high-quality white chocolate chips for best melting results and smooth texture.
- Only sweetened condensed milk works correctly to thicken fudge; do not substitute with evaporated milk.
- Avoid overcooking fudge in the microwave to prevent graininess.
- Lining the pan with foil or parchment makes removing the fudge easier for cutting shapes on the countertop.
