Served with protein-rich quinoa and tangy Greek yogurt, it’s a nutritious and flavorful Mediterranean-inspired meal that’s easy to prepare and perfect for weeknight dinners.

Ingredients

Scale

Vegetables and Legumes

  • 1 medium cauliflower (about 1½ pound)
  • 1 pound potatoes (cut into wedges)
  • 1 can chickpeas (15 oz, drained and rinsed)
  • ½ cup pitted olives

Marinade

  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • 3 tablespoons lemon juice
  • 3 cloves garlic (grated or minced)
  • 1½ teaspoons turmeric
  • 1 teaspoon dried rosemary
  • ¾ teaspoon salt
  • Black pepper (to taste)

To Serve

  • 1 cup cooked quinoa (or substitute with farro, brown rice, couscous, orzo, bulgur, wild rice, crumbled feta, or rotisserie chicken)
  • ½ cup Greek yogurt
  • ¼ cup fresh parsley (chopped)

Instructions

  1. Make the marinade: Preheat the oven to 430°F (220°C). In a small bowl, whisk together the olive oil, lemon zest, lemon juice, grated garlic, turmeric, dried rosemary, salt, and black pepper until well combined.
  2. Prep the veggies: Cut the cauliflower into florets and slice the potatoes into thin, even wedges to ensure quick cooking. Rinse and drain the chickpeas thoroughly. Place the cauliflower, potatoes, chickpeas, and olives on a large baking sheet and pour the marinade over everything. Toss well to coat all pieces evenly.
  3. Roast: Arrange the ingredients in a single layer on the baking sheet. Roast in the preheated oven for 30 minutes or until the vegetables are tender and golden around the edges, stirring halfway if desired for even roasting.
  4. Finish and serve: Remove from the oven and sprinkle with chopped fresh parsley. Add a squeeze of fresh lemon juice and the cooked quinoa or your chosen grain. Gently toss everything on the baking sheet to combine. Serve warm in bowls topped with a spoonful of Greek yogurt for a creamy contrast.

Notes

  • Substitutions: Use broccoli or Romanesco in place of cauliflower; sweet potatoes or butternut squash instead of potatoes; white beans or lentils instead of chickpeas; capers, sun-dried tomatoes, or chopped artichokes instead of olives.
  • For the marinade, you can swap olive oil for half olive oil and half vegetable broth; lemon juice and zest for red wine vinegar or apple cider vinegar; garlic for garlic powder or roasted garlic; turmeric for curry powder or saffron; rosemary for thyme, oregano, or Italian herb mix.
  • Serve with alternative grains like farro, couscous, brown rice, or barley, or protein like rotisserie chicken instead of quinoa.
  • Use low-fat Greek yogurt, Skyr, or dairy-free yogurt as alternatives to traditional Greek yogurt.
  • Replace parsley and lemon garnish with fresh herbs like cilantro, basil, or mint for variation.
  • Cut all vegetables evenly to ensure uniform roasting.
  • Dry chickpeas thoroughly to help them crisp up in the oven.
  • Use a large baking sheet and avoid overcrowding to achieve caramelization.
  • Toss veggies well in marinade to coat evenly and get a bright turmeric color.
  • Adjust lemon juice at the end to brighten the dish and balance spices.
  • Add fresh herbs after baking to preserve their vibrant flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
