  • 3/4 teaspoon kosher salt

  • 4 ounce can diced green chiles
  • 15 ounce can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 ounce jar salsa
  • 1 cup shredded colby jack cheese
  • 10 tortilla chips

Instructions

  1. Preheat Broiler: Preheat your oven to broil to prepare for melting and crisping the cheese topping later.
  2. Cook Turkey: Heat a 12-inch skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Add the ground turkey, breaking it up with a spoon as it cooks.
  3. Sauté Veggies: Push the turkey to one side of the skillet. Add the diced onion and red bell pepper to the other side. Sprinkle salt, black pepper, chili powder, cumin, garlic powder, and smoked paprika over the mixture. Sauté the vegetables and continue cooking, stirring the turkey occasionally, until the meat is fully cooked and veggies are tender.
  4. Add Remaining Ingredients: Stir in the black beans, frozen corn, diced green chiles, chopped cilantro, and salsa. Mix everything thoroughly and cook for a few more minutes until heated through.
  5. Top and Broil: Evenly distribute the 10 tortilla chips on top of the skillet mixture. Sprinkle the shredded colby jack cheese over the chips. Transfer the skillet to the oven and broil until the cheese is melted and lightly browned, about 3-5 minutes.
  6. Garnish and Serve: Remove from oven, garnish with additional chopped cilantro if desired, and serve hot directly from the skillet.
