- 12 savoiardi biscuits (3.5 oz / 100 g) – ladyfingers
- 3 tablespoons brewed espresso coffee

- Brew the espresso: Brew 3 tablespoons of espresso coffee and allow it to cool completely to avoid melting the mascarpone in the next step.
- Crush the biscuits: Place the ladyfingers in a blender or food processor and blitz until you achieve a fine powder consistency similar to cookie crumbs.
- Make the cream mixture: In a mixing bowl, combine the mascarpone cheese and sifted powdered sugar. Add the cooled espresso and mix thoroughly until smooth and creamy.
- Combine biscuit powder and cream: Add the crushed ladyfingers to the mascarpone mixture and using a rubber spatula, stir well until fully incorporated into a thick, cookie dough-like batter.
- Form the truffle balls: Scoop approximately one teaspoon of the mixture and roll it gently between your palms to form a ball. Place each ball on a plate and continue until all mixture is used, resulting in about 10 truffles.
- Chill to set: Refrigerate the truffle balls for 1 hour to allow them to firm up while maintaining a soft center. For a firmer texture, chill longer as preferred.
- Coat with cacao powder: Place cacao powder in a small bowl and roll each chilled truffle ball in the powder to coat evenly. Serve immediately and enjoy these decadent treats.
