A hearty and delicious Tater Tot Breakfast Casserole featuring flavorful breakfast sausage, crispy bacon, sautéed bell peppers, and a blend of cheddar and swiss cheeses baked to perfection with crispy tater tots on top. Perfect for a filling breakfast or brunch.

- 1 pound breakfast sausage
- ½ pound about 5 slices bacon
Vegetables
- 1 cup red bell pepper cleaned and finely diced
- 1 cup green bell pepper cleaned and finely diced
- Green onions or chives for garnish if desired
Dairy & Eggs
- 8 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese (reserve ½ cup for topping)
- 1 cup shredded swiss cheese or your favorite
Other
- 1 tablespoon olive oil for cooking peppers
- ½ teaspoon salt
- ½ teaspoon season salt
- ½ teaspoon black pepper
- 1 bag 32 oz frozen tater tots
Instructions
- Preheat Oven: Preheat oven to 350 degrees Fahrenheit and spray a 13×9 inch baking dish with cooking spray.
- Cook Sausage: In a heavy skillet over medium heat on the stovetop, cook the breakfast sausage until browned and cooked through. Drain excess fat and set aside.
- Cook Bacon: In the same skillet, cook the bacon until crispy. Remove bacon from pan and place on a cutting board to cool. Once cooled, chop the bacon into bite-sized pieces. Drain pan and wipe clean.
- Sauté Peppers: Add olive oil to the skillet and heat over medium. Add the red and green bell peppers and cook until soft, about 5-7 minutes. Remove from pan and drain any excess liquid if necessary.
- Mix Egg Mixture: In a large bowl, whisk together eggs, milk, 1½ cups shredded cheddar cheese, shredded swiss cheese, salt, season salt, and black pepper until well combined.
- Combine Ingredients: Stir the cooked sausage, chopped bacon, and sautéed peppers into the egg mixture until evenly distributed.
- Assemble Casserole: Pour the mixture into the prepared 13×9 inch baking dish. Top evenly with a 32 oz bag of frozen tater tots.
- Bake: Bake in the preheated oven for 50-55 minutes, or until the casserole is bubbly and the eggs are fully set.
- Add Extra Cheese: Remove casserole from oven and sprinkle the reserved ½ cup cheddar cheese on top. Return casserole to the oven and bake for an additional 3-4 minutes until the cheese is melted and bubbly.
- Rest and Serve: Remove from oven and let the casserole rest on a wire rack for 5-10 minutes before serving. Garnish with chopped green onions or chives if desired.
Notes
- You can reserve ½ cup of cheddar cheese to sprinkle on top of the casserole at the end of baking for an extra cheesy crust.
- This casserole can be made ahead of time; cover tightly with plastic wrap and refrigerate overnight.
- When ready to bake, take the casserole out of the refrigerator and let it sit at room temperature for 20-30 minutes before baking as directed.
- You can cook the sausage, bacon, and peppers in advance to speed up assembly time in the morning.
