  • 4 large portobello mushrooms (or 8 smaller ones)
  • 1 tablespoon olive oil
  • ½ medium onion (chopped)
  • 4 cloves garlic (minced)
  • ½ medium green bell pepper (chopped)
  • 2 cups spinach (chopped)
  • 4 cocktail tomatoes (chopped)
  • ¼ cup goat cheese (crumbled)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 tablespoon hot sauce (Frank’s)
  • ½ cup breadcrumbs
  • ½ cup mozzarella cheese (shredded)

Instructions

  1. Prep the oven: Preheat your oven to 400°F to get it ready for baking the mushrooms.
  2. Prep the mushrooms: Gently remove the stems from the mushrooms and keep them for the stuffing. Place the mushrooms stem side down on a baking pan and bake for 15 minutes until they release water. Remove from oven and pat dry with paper towels to soak up any excess moisture. Set aside.
  3. Make the filling: Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic and sauté until onion turns translucent. Add chopped green bell pepper and spinach, cooking until the spinach wilts. Stir in chopped cocktail tomatoes, crumbled goat cheese, salt, pepper, chopped mushroom stems, hot sauce, and breadcrumbs. Cook for 2 more minutes, mixing thoroughly to combine all flavors.
  4. Stuff the mushrooms: Divide the filling mixture evenly and stuff into the mushroom caps. Sprinkle shredded mozzarella cheese on top of each stuffed mushroom.
  5. Bake: Place the stuffed mushrooms back into the oven and bake for 10 minutes, or until the mozzarella cheese is melted and bubbly. Remove and serve warm.

Notes

  • Use paper towels to soak up excess water from mushrooms after baking to prevent sogginess.
  • You can substitute goat cheese with cream cheese or feta if preferred.
  • For a gluten-free version, replace breadcrumbs with gluten-free breadcrumbs or crushed nuts.
  • Add extra heat by increasing the amount of hot sauce or adding red pepper flakes.
