- ⅓ cup strawberry jam (80g)
- ¼ cup granulated sugar (60g)
- ⅓ cup heavy cream (80g)
- Pinch of salt

- Preheat the oven: Set your oven to 350°F (conventional/non-fan) and line a 9×13-inch baking pan with parchment paper for easy removal.
- Mix wet ingredients: In a large bowl, combine vegetable oil, melted butter, granulated sugar, eggs, and vanilla extract. Whisk until the mixture is smooth, about 2 minutes.
- Prepare strawberry puree: Blitz fresh or thawed frozen strawberries in a food processor until mostly smooth with some texture remaining if desired.
- Combine wet ingredients and puree: Add the strawberry puree and milk to the wet mixture, whisking until well incorporated.
- Add dry ingredients: Sift together all-purpose flour, cornstarch, baking powder, baking soda, and salt. Gently whisk the dry ingredients into the wet mixture until just combined with no lumps; avoid overmixing.
- Add food coloring (optional): If desired, fold in a few drops of pink gel food coloring for a vibrant cake color.
