Salad

  • 8 cups fresh spinach
  • 2 cups sliced strawberries
  • 1 avocado thinly sliced
  • 1/3 cup chopped almonds
  • 1/3 cup thinly sliced red onion
  • 1/3 cup coconut bacon

Instructions

  1. Prepare the Dressing: Add all of the dressing ingredients to a jar. Screw the lid on tightly and shake vigorously to mix until the dressing is well combined and emulsified.
  2. Assemble the Salad: In a large salad bowl, combine the spinach, sliced strawberries, chopped almonds, thinly sliced red onion, and coconut bacon. Drizzle the prepared lemon poppyseed dressing over the salad and toss gently to coat all the ingredients evenly.
