Description

A fresh and flavorful smoked salmon avocado toast recipe featuring creamy mashed avocado, tangy lemon, crisp veggies, and savory smoked salmon atop toasted sourdough.

Ingredients

Scale

Main Ingredients

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 2 teaspoons chopped fresh chives
  • 1/2 teaspoon everything but the bagel seasoning
  • 3–4 ounces smoked salmon
  • 1 handful microgreens

Vegetables & Seasonings

  • 2 wedges lemon
  • 1 tomato, sliced
  • 8–10 slices cucumber
  • Red onion, finely sliced (about 2 tablespoons)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Mash the avocado: In a bowl, use a fork to mash the ripe avocado until smooth but still slightly chunky. Add a squeeze of lemon juice, chopped fresh chives, and the everything but the bagel seasoning. Mix well to combine.
  2. Toast the bread: Toast the slices of sourdough bread to your preferred level of crispiness. This adds texture and prevents sogginess.
  3. Spread the avocado: Gently spread the mashed avocado mixture evenly onto each toasted bread slice.
  4. Add vegetables: Layer the sliced tomatoes, cucumber slices, and finely sliced red onion on top of the avocado. Lightly sprinkle with salt and black pepper to enhance the flavors.
  5. Top with salmon and garnish: Arrange the smoked salmon slices over the veggies. Add extra everything but the bagel seasoning and chopped chives for extra flavor. Finish with a handful of fresh microgreens and a final squeeze of lemon juice. Serve immediately and enjoy!

Notes

  • The nutritional values are approximate and based on one serving using the listed ingredients without optional additions.
  • You can substitute sourdough with whole grain or gluten-free bread as preferred.
  • Microgreens can be replaced with arugula or baby spinach for a different leafy green option.
  • Adjust seasoning to taste, especially the salt, depending on the saltiness of smoked salmon.
  • For a vegan version, omit smoked salmon and add sliced avocado and tomato with extra microgreens.
