Instructions

  1. Prepare Slow Cooker: Spray the slow cooker with non-stick cooking spray. Place 4 boneless skinless chicken breasts evenly on the bottom of the slow cooker.
  2. Make Sauce: In a small bowl, whisk together ½ cup soy sauce, ½ cup honey, ¼ cup rice wine vinegar, ¼ cup chopped onion, 2 teaspoons minced garlic, ¼ teaspoon pepper, and ¾ teaspoon ground ginger until well combined.
  3. Cook Chicken: Pour the sauce mixture over the chicken breasts in the slow cooker. Cover and cook on HIGH for 4 hours or on LOW for 6 hours until the chicken is tender and cooked through.
  4. Shred Chicken: Using a slotted spoon, remove the cooked chicken from the slow cooker and place on a plate. Shred the chicken using two forks.
  5. Thicken Sauce: Pour the cooking sauce from the slow cooker into a medium saucepan. In a small bowl, whisk together ¼ cup water and 3 tablespoons cornstarch. Slowly whisk this mixture into the sauce in the saucepan over medium-high heat. Continue whisking as the sauce comes to a boil and thickens, about 2 minutes.
  6. Combine and Serve: Return the shredded chicken to the slow cooker. Pour the thickened sauce over the chicken and stir to coat evenly. Serve the honey teriyaki chicken over rice and garnish with green onions and sesame seeds if desired.
