- 1 cup diced onion, about ½ an onion
- 1 cup diced red bell pepper, about 1 pepper
- 1 cup diced green bell pepper, about 1 pepper
Dairy and Eggs
- 2 cups shredded cheddar cheese
- 12 large eggs
- ½ cup half & half
Seasonings and Garnish
- 1 tablespoon chopped parsley, plus more for garnish
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Prepare slow cooker: Spray the pot of a 4-quart or 6-quart slow cooker with cooking spray and set it aside to prevent sticking.
- Mix ingredients: In a large bowl, combine the cooked and crumbled breakfast sausage, diced ham, frozen diced hash browns, diced onion, diced red bell pepper, diced green bell pepper, and shredded cheddar cheese. Stir well to evenly distribute all ingredients.
- Add mixture to slow cooker: Transfer the meat and potato mixture into the prepared slow cooker pot and spread it out evenly.
- Prepare egg mixture: In another bowl, whisk together the eggs, half & half, chopped parsley, garlic powder, salt, and ground black pepper until fully blended.
- Combine and cook: Pour the egg mixture over the top of the meat and potato mixture in the slow cooker. Cover with the lid and cook on LOW for 6 hours or on HIGH for 3 hours until the casserole is set and cooked through.
- Serve: Once cooked, serve the casserole warm, garnished with freshly chopped parsley for extra freshness and color.
Notes
- For a vegetarian version, substitute sausage and ham with plant-based alternatives and ensure the cheese is vegetarian-friendly.
- You can prepare the casserole the night before and refrigerate; just add extra cooking time if starting from cold.
- Use a slow cooker liner to make cleanup easier.
- If you use fresh potatoes instead of frozen hashbrowns, partially cook them before adding to avoid undercooked potatoes.
- Adjust seasonings to taste, especially salt and pepper based on the saltiness of your sausage and ham.
- Adding extra cheese on top during the last 30 minutes of cooking can create a delicious melted topping.
