Description

Slow Cooker Beef Tips and Gravy is a comforting and hearty dish featuring tender stew meat slow-cooked to perfection in a flavorful gravy made with garlic, onion soup mix, beef broth, ketchup, and Worcestershire sauce. Perfect served over rice, noodles, or mashed potatoes, this easy slow cooker recipe is ideal for a satisfying dinner with minimal effort.

Ingredients

Scale

Beef and Seasonings

  • 2 lbs stew meat
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp dried thyme
  • 3 tbsp garlic (minced)
  • 1 (1 oz) package dry onion soup mix

Liquids and Thickeners

  • 2 cups beef broth
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 3 tbsp cornstarch

Instructions

  1. Prepare the Slow Cooker: Place 2 lbs of stew meat in the bottom of a 6-quart slow cooker.
  2. Mix Seasonings and Sauce: In a medium bowl, whisk together 1 tsp salt, 1 tsp black pepper, ½ tsp dried thyme, 3 tbsp minced garlic, 1 package dry onion soup mix, 2 cups beef broth, 3 tbsp ketchup, 1 tbsp Worcestershire sauce, and 3 tbsp cornstarch until well combined.
  3. Add Seasoning Mixture: Pour the seasoning and broth mixture evenly over the stew meat in the slow cooker.
  4. Cook the Beef: Cover the slow cooker and cook on low heat for 8 hours to allow the beef tips to become tender and the flavors to meld.
  5. Serve: Serve the beef tips and gravy over rice, noodles, or mashed potatoes, then enjoy your hearty meal!

Notes

  • Deeper Flavor: Sear the beef tips in a hot skillet with butter or olive oil for a few minutes before adding to the slow cooker to enhance flavor and color.
  • Thicker Gravy: To thicken the gravy further, mix additional cornstarch with cold water and stir into the slow cooker near the end of cooking; let it cook a bit longer to thicken.
  • Make Ahead: Prepare the seasoning mixture the night before and refrigerate to save time on cooking day.
  • Cook on Low Heat: Use low heat setting for best results to allow connective tissues in the meat to break down slowly for tender beef.
  • Even-Sized Beef Tips: Cut stew meat into similar sized pieces to ensure even cooking throughout.
