Description

A hearty and flavorful Sloppy Joe Bowls recipe featuring roasted sweet potatoes and a savory ground beef mixture simmered in a tangy tomato sauce. Perfect for a comforting dinner that’s easy to prepare and full of bold flavors.

Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes cut into 1/2 inch cubes (about 3 cups)
  • 2 tablespoons avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Sloppy Joe Meat

  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 8 ounces tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon honey
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon dried mustard
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Other Ingredients

  • Dill pickle slices
  • Sliced red onion

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat oven to 425° F and line a baking sheet with foil or parchment paper. Place the sweet potato cubes on the sheet pan and drizzle with avocado oil, chili powder, garlic powder, salt, and pepper. Toss with your hands until all cubes are evenly coated.
  2. Roast Sweet Potatoes: Roast the sweet potatoes in the oven for 30 minutes, tossing halfway through to ensure even cooking, until they are tender and slightly caramelized on the edges.
  3. Cook Sloppy Joe Meat: While sweet potatoes roast, heat a large skillet over medium-high heat. Add a little oil and then the ground beef and diced onion. Crumble and cook the beef with the onion until the beef is fully cooked and onions are tender.
  4. Add Spices and Sauce: Stir in chili powder, dried mustard, celery seed, garlic powder, salt, and black pepper. Pour in tomato sauce, ketchup, Worcestershire sauce, and honey. Mix well to coat all the meat in sauce.
  5. Simmer Sloppy Joe Mixture: Reduce heat to medium-low and let the mixture simmer for 15 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
  6. Assemble Bowls: Divide the roasted sweet potatoes evenly into serving bowls. Top with the sloppy joe meat mixture. Garnish with dill pickle slices and sliced red onion. Serve immediately for a warm and satisfying meal.

Notes

  • You can substitute ground beef with ground turkey or plant-based ground meat for a leaner or vegetarian option.
  • Adjust the chili powder and spices to your preferred spice level.
  • Use fattier or leaner beef depending on your preference; leaner beef will reduce fat content.
  • Leftover sloppy joe meat can be stored in an airtight container in the refrigerator for up to 3 days.
  • Adding a splash of vinegar to the sauce can enhance the tanginess if desired.
  • For extra texture, consider topping with shredded cheese or fresh herbs such as cilantro or parsley.
