For the Onions and Chicken

  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste

For the Gravy and Topping

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup shredded Swiss cheese
  • 8 slices provolone cheese

Instructions

  1. Caramelize the Onions: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sliced onions and sauté, stirring occasionally, until they become deep golden brown and caramelized, about 10 minutes. Remove the onions from the skillet and set aside on a plate.
  2. Cook the Chicken: In the same skillet, add the 4 boneless skinless chicken breasts. Cook each side for 4 minutes until cooked through and no longer pink inside. Season with salt and pepper to taste. Remove the chicken and set aside with the onions.
  3. Make the Gravy: Melt 2 tablespoons unsalted butter in the skillet over medium heat. Stir in 2 tablespoons all-purpose flour and cook for 1-2 minutes until combined into a roux. Slowly whisk in 2 cups beef broth, then add 1 teaspoon dried oregano, 1 teaspoon dried thyme, and salt and pepper to taste. Simmer for 1-2 minutes until the gravy thickens slightly.
  4. Combine and Add Cheese: Lower the heat to a simmer. Return the cooked chicken and caramelized onions to the skillet, spooning the gravy over them evenly. Sprinkle 1 cup shredded Swiss cheese over the top, followed by 8 slices of provolone cheese, layering evenly to cover the chicken and onions.
  5. Melt the Cheese under the Broiler: Place the skillet under the oven broiler for 1-2 minutes. Keep a close eye until the cheese is melted and bubbly. Remove from the oven and serve hot.
