Description

A classic Reuben Sandwich featuring dark rye bread, Swiss cheese, corned beef, sauerkraut, and thousand island dressing, pan-fried to golden perfection for a melty, crunchy lunch or dinner option.

Bread and Cheese

  • 4 slices dark rye bread
  • 1 cup Swiss cheese (shredded)

Fillings and Sauce

  • 4 tablespoons thousand island dressing
  • 1 cup sauerkraut (well drained)
  • ½ pound corned beef (thinly sliced, or pastrami)

For Cooking

  • 4 tablespoons butter (unsalted, softened)

Instructions

  1. Assemble sandwiches: Lay out 2 slices of dark rye bread on a cutting board. Distribute Swiss cheese evenly on each slice. Drizzle thousand island dressing over the cheese. Add half the corned beef on each, then divide the well-drained sauerkraut evenly. Top each with the remaining bread slices.
  2. Prepare for cooking: Spread about 1 tablespoon of softened butter on the outside of the top bread slices of each sandwich.
  3. Cook first side: Heat a large skillet over medium heat. Place the sandwiches butter side down in the skillet. Cook until the bread is golden and the cheese begins to melt, approximately 3 minutes.
  4. Cook second side: Spread remaining butter on the now-top bread slice. Flip sandwiches carefully and cook another 2 to 3 minutes until golden and cheese is fully melted.

  • Use sturdy bread such as dark rye, marble rye, or pumpernickel to hold the fillings without sogginess.
  • Choose corned beef for mild flavor or pastrami for a peppery, smoky variation, or mix both for extra flavor depth.
