Instructions
- Heat the oil: Heat the extra virgin olive oil in a medium saucepan over medium heat and cook the finely chopped onion slowly for 5-8 minutes, stirring regularly to prevent burning.
- Add garlic: Add the roughly chopped garlic to the saucepan and cook for an additional 1 minute until fragrant.
- Cook peas and stock: Stir in the frozen peas and vegetable stock, then increase the heat to medium-high and let the mixture simmer for 5-8 minutes until the peas are tender.
- Add mint and blend: Add the finely chopped fresh mint to the pot, then carefully blend the soup until smooth using a hand blender or regular blender.
- Season the soup: Season the soup with sea salt, freshly ground black pepper, and freshly squeezed lemon juice to taste, stirring well to combine.
- Serve: Serve the soup warm or chilled, garnished as desired with fresh mint leaves or a drizzle of olive oil.
