  • 1½ teaspoon baking powder

  • 4 tablespoon unsalted butter, room temperature
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup neutral oil (vegetable, canola, or olive oil)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract or emulsion (optional)
  • ½ cup milk
  • ¼ cup sliced almonds

Instructions

  1. Prepare the Raspberry Jam: In a medium saucepan, combine frozen raspberries, cornstarch, granulated sugar, lemon zest, and lemon juice. Place over medium heat and stir frequently. Bring the mixture to a boil, then let it boil gently for 6 minutes while stirring occasionally. Remove from heat and allow the jam to cool completely before using.
  2. Preheat Oven and Prepare Pan: Preheat the oven to 350℉ (175℃). Line a 9-inch springform pan with parchment paper and set aside.
  3. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set aside.
  4. Cream Butter and Sugar: Using a hand or stand mixer, beat the softened unsalted butter and granulated sugar together for several minutes until the mixture is smooth and creamy. Add the eggs and vanilla extract, then mix for 1 to 2 minutes until fully incorporated and smooth. Stir in the neutral oil until combined.
  5. Add Dry Ingredients and Milk: Alternately add the dry ingredient mixture and milk to the wet mixture, beginning and ending with the dry ingredients. Mix gently between additions until just combined to avoid overmixing.
  6. Assemble the Cake: Pour the batter into the prepared springform pan. Spread the cooled raspberry jam evenly over the top of the batter and sprinkle with sliced almonds.
