Description

This Ranch Potatoes with Green Beans recipe features tender Yukon gold potatoes and crisp green beans tossed in a flavorful ranch seasoning blend, crispy bacon, and butter. It’s a deliciously savory side dish perfect for any American meal.

Ingredients

Scale

Produce

  • 1 lb. fresh green beans, trimmed
  • 1 ½ lbs. baby Yukon gold potatoes, cut in half

Meat

  • 12 oz thick cut bacon

Dairy & Seasonings

  • 4 tbsp butter
  • 2 ½ tbsp ranch seasoning
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Boil Green Beans: Bring a medium pot of water to a boil, add the green beans, and cook until they turn bright green and tender, about 5 minutes. Remove them with a slotted spoon and place in a bowl of ice water to halt cooking.
  2. Cook Potatoes: After removing green beans, add the potatoes to the boiling water and cook until fork tender, approximately 10 minutes. Drain carefully once done.
  3. Cook Bacon: While potatoes cook, heat a large skillet over medium-high heat and cook bacon pieces until browned and crispy. Remove the bacon with a slotted spoon and drain on paper towels. Set aside.
  4. Brown Potatoes: In the same skillet with the bacon drippings, add the drained potatoes. Stir frequently to brown them evenly on all sides over medium-high heat.
  5. Combine Ingredients: Reduce heat to medium and add butter, green beans, ranch seasoning, and garlic powder to the skillet. Stir well to coat everything evenly.
  6. Add Bacon and Season: Return cooked bacon to the skillet, mix thoroughly, then season with salt and pepper to taste. Serve warm and enjoy.

Notes

  • Use baby Yukon gold potatoes for their creamy texture and quick cooking time.
  • Ranch seasoning can be homemade or store-bought depending on preference.
  • If you prefer less bacon fat, drain some of the drippings before browning potatoes but keep enough to add flavor.
  • For extra crispness, finish potatoes under a broiler for 2-3 minutes after browning.
  • The ice water bath stops the cooking process of green beans and helps retain their vibrant color and crunch.
