Pizzadillas are a delicious fusion of pizza and quesadilla, featuring flour tortillas filled with melted mozzarella, parmesan, pepperoni, and a flavorful pizza sauce, broiled to crispy perfection. A quick and easy recipe perfect for a satisfying snack or light meal.

- 1 Tbsp. extra-virgin olive oil
- 2 medium flour tortillas
- 1/3 cup pizza sauce
- 2 cloves garlic, minced
- 1 cup shredded mozzarella
- 1/2 cup freshly grated Parmesan
- 1/3 cup sliced pepperoni
- 1/4 tsp. Italian seasoning
- Fresh chopped parsley, for garnish
Instructions
- Heat and Prepare Base: Heat the broiler on high. In a large oven-safe skillet over medium heat, add olive oil and warm it. Place one tortilla in the skillet and evenly spread about half of the pizza sauce on the tortilla. Scatter the minced garlic over the sauce and sprinkle half of the shredded mozzarella, grated Parmesan, sliced pepperoni, and Italian seasoning over the top.
- Add Second Tortilla and Cook: Place the second tortilla on top of the first and cook until the cheese begins to melt and the bottom tortilla turns golden brown, about 5-7 minutes. Be careful to avoid burning the tortilla.
- Flip Carefully: When ready to flip, cover the skillet with a large plate, invert the skillet to transfer the pizzadilla onto the plate, then slide the pizzadilla back into the skillet with the cooked side up. Evenly spread the remaining pizza sauce, mozzarella, Parmesan, pepperoni, and Italian seasoning on top.
- Broil to Finish: Place the skillet under the preheated broiler and broil for about 2 minutes or until the cheese on top is melted and bubbly and the pepperoni edges become crispy. Watch carefully to prevent burning.
- Garnish and Serve: Remove the skillet from the oven and garnish the pizzadilla with freshly chopped parsley. Slice and serve immediately while warm.
Notes
- You can substitute pepperoni with cooked sausage, mushrooms, or vegetables for a different flavor.
- If you do not have an oven-safe skillet, you can use a baking sheet for the broiling step, but flipping the pizzadilla may be more difficult.
- Use pre-shredded cheese to save time, but freshly shredded mozzarella melts better.
- Watch the broiler closely as cheese can quickly burn within seconds.
- For a gluten-free version, use gluten-free tortillas.
