For the crust:
- 4 1/2 cups pretzels
- 3 tbsp sugar
- 12 tbsp butter, melted
For the filling:
- 3/4 cup heavy whipping cream
- 1/4 cup sugar
- 3/4 cup cottage cheese
- 3 tbsp peanut butter
- 1/2 cup chocolate chips
Instructions
- Make the crust: Add pretzels and sugar to your food processor and pulse. With the motor running, pour the melted butter through the top and continue pulsing until the mixture is combined and can be pinched together easily with your fingers.
- Prepare the pie pan: Grease a 9-inch pie pan, transfer the crust mixture into it, and press down firmly with your hands along the bottom and sides to form an even crust. Place the crust in the freezer while making the filling.
- Whip cream and sugar: In a large bowl, whip the heavy cream and sugar together using an electric mixer until stiff peaks form, about 5 minutes.
- Add cottage cheese and peanut butter: Stir in the cottage cheese and peanut butter, whisking for 1 minute until smooth and combined.
- Assemble the pie: Spoon the filling into the chilled crust and smooth the top with the back of a spoon or rubber spatula. Sprinkle chocolate chips evenly over the filling and press them down gently.
- Freeze to set: Place the assembled pie back into the freezer and allow it to set for 4 hours.
- Serve: Remove the pie from the freezer 10 minutes before serving to soften slightly. Slice and enjoy!
