- 3 tablespoons red curry paste
- 4 cloves garlic minced
- 3 tablespoons low sodium soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 tablespoon toasted sesame oil
- 4 cups fresh spinach packed
- 20–24 frozen dumplings

- Chili crisp
- Green onions sliced
- White and black sesame seeds
Instructions
- Preheat Oven: Preheat your oven to 400°F to prepare for baking the dumplings.
- Make Sauce: In the bottom of your baking dish, combine coconut milk, red curry paste, minced garlic, soy sauce, fish sauce, honey, and toasted sesame oil. Whisk until the curry paste and honey are fully dissolved and the sauce is smooth.
- Add Spinach: Add the fresh spinach to the sauce in the baking dish, spreading it out evenly.
- Arrange Dumplings: Place the frozen dumplings in a single layer on top of the spinach and sauce mixture.
- Bake Covered: Cover the baking dish with aluminum foil and bake for 25 minutes to steam the dumplings and wilt the spinach.
- Rest and Sauce: Remove from the oven and let rest for a minute. Spoon sauce gently over the dumplings to coat them.
- Garnish and Serve: Drizzle chili crisp over the dumplings, then sprinkle with sliced green onions and white and black sesame seeds before serving.
Notes
- Use low sodium soy sauce to control salt content in the dish.
- If fresh spinach is unavailable, frozen chopped spinach can be used after squeezing out excess water.
- Adjust the amount of chili crisp based on your spice preference.
- Leftovers can be stored covered in the refrigerator for up to 2 days.
- Reheat gently in the oven or microwave to maintain texture.
- For a vegetarian version, substitute fish sauce with additional soy sauce or a plant-based alternative.
