Ingredients
Scale
Meat Sauce
- 1 lb lean ground beef
- 2 cups marinara sauce
- 1 Tbsp Italian seasonings
- Sea salt and ground pepper to taste
Cheese Mixture
- 1/2 cup freshly shredded mozzarella cheese
- 1/4 cup finely grated Parmesan cheese
- 1 cup cottage cheese (drained)
- 3 garlic cloves (finely minced or grated)
Zucchini and Topping
- 2 medium zucchini (sliced into 1/4-inch thin rounds)
- 1/2 cup freshly shredded mozzarella cheese for topping
- Olive oil or avocado oil for greasing muffin tray
- Parsley for garnish
Instructions
- Prepare Zucchini: Slice zucchini into 1/4-inch thin rounds, place them in a colander, and sprinkle lightly with salt. Set aside to draw out excess water and help prevent a watery final dish.
- Preheat Oven and Prepare Tray: Preheat your oven to 400°F. Lightly spray or wipe a 12-hole muffin tray with olive or avocado oil to prevent sticking.
- Cook Ground Meat: In a large skillet over medium heat, cook the ground beef, breaking it up with a wooden spoon until browned. Drain excess grease thoroughly.
- Add Sauce and Seasoning: Add Italian seasonings and marinara sauce to the meat. Simmer for 12 minutes until the sauce thickens. Season with sea salt and pepper to taste.
- Make Cheese Mixture: In a mixing bowl, combine 1/2 cup shredded mozzarella, Parmesan, drained cottage cheese, and minced garlic. Stir well to combine.
- Dry Zucchini Slices: Blot the zucchini slices with a paper towel or kitchen towel to remove excess moisture.
- Assemble Bites: Place one zucchini slice into each muffin cup. Add a spoonful of the meat sauce, followed by a spoonful of the cheese mixture. Repeat with another zucchini slice and more meat sauce, then top each with shredded mozzarella.
- Bake: Bake the assembled bites at 400°F for 25 minutes until bubbly and golden on top.
- Garnish and Serve: Sprinkle with fresh parsley before serving for a burst of color and freshness.
Notes
- Shred your own cheese for the best melt and texture.
- Use marinara sauce with no added sugar, or prepare your own for better control over ingredients.
- Draining the cottage cheese helps reduce moisture and improve the final texture.
- Slicing and salting zucchini ahead of time helps avoid sogginess by removing excess water.
- Feel free to substitute ground beef with lean ground turkey or bison for a different flavor or leaner option.
