  • 2 cups corn, canned or frozen
  • 2 cloves garlic, minced

  • ¾ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • 8 ounces cream cheese, softened
  • 2 tablespoons lime juice (about 1 lime)
  • ½ cup sour cream (or mayonnaise)

Instructions

  1. Melt Butter and Cook Vegetables: Melt the butter in a medium skillet over medium heat. Add the finely diced jalapeño and yellow onion, cooking for about 5 minutes until softened and translucent.
  2. Add Corn and Garlic: Stir in the corn kernels and minced garlic, cooking together for an additional 5 minutes.
  3. Season the Mixture: Sprinkle in chili powder, ancho chili powder, smoked paprika, kosher salt, and cayenne pepper. Gently mix until the vegetables are coated evenly with the spices.
  4. Add Cream Cheese: Lower the heat to low and add the softened cream cheese. Stir continuously until it melts completely and combines smoothly with the vegetable mixture.
  5. Incorporate Lime Juice and Sour Cream: Stir in the fresh lime juice and sour cream gently until fully combined.
  6. Serve and Garnish: Remove the skillet from heat and transfer the dip into a serving dish. Top with chopped cilantro and crumbled Cotija cheese. Serve warm with tortilla chips.

Notes

  • Use frozen, canned, or fresh corn; if frozen, thaw completely, and if canned, drain well. Fresh corn should be sliced off the cob and cooked 5 minutes.
  • Adjust spice level by swapping jalapeño with milder or hotter peppers such as mild diced green chiles for less heat or serrano for more heat.
  • If the dip is too thick, add milk one tablespoon at a time until desired consistency is achieved.
