Instructions
- Prepare the Meat Sauce: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for about 3 minutes until it softens. Add diced green bell pepper and cook for 2 more minutes, stirring occasionally. Stir in the minced garlic and cook for 1 minute until fragrant.
- Cook the Ground Beef: Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat. Season with taco seasoning, salt, and black pepper, stirring well to combine.
- Simmer the Meat Sauce: Pour in the crushed tomatoes and enchilada sauce. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Set aside once done.
- Make the Cheese Sauce: In a saucepan over medium heat, melt butter. Add minced garlic and cook for about 1 minute. Sprinkle flour over the butter and garlic, whisking constantly for about 1 minute to form a roux.

- Toss Pasta in Cheese Sauce: Combine cooked spaghetti with the cheese sauce in a large bowl or back in the saucepan, tossing until the noodles are evenly coated.
- Prepare for Baking: Preheat oven to 375°F. Grease a 9×13-inch casserole dish and spread the creamy spaghetti mixture evenly in the dish.
- Layer Meat Sauce and Cheese: Spoon the meat sauce evenly over the spaghetti layer. Sprinkle 1 ½ cups shredded Colby Jack cheese on top.
