  • 1 1-pound sockeye salmon fillet, cut into 4 (1/4-lb) fillets
  • 1/2 cup sun-dried tomatoes, drained
  • 3 cups baby spinach
  • 1/2 cup feta cheese crumbles
  • Sea salt, to taste
  • Avocado oil or cooking oil of choice, for brushing

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F and line a baking sheet with parchment paper to prepare for baking the salmon.
  2. Prepare Filling: Roughly chop the sun-dried tomatoes. Heat them in a small saucepan over medium heat until sizzling, then add baby spinach and cook until wilted. Remove from heat and stir in feta cheese and sea salt. Set the filling mixture aside.
  3. Slice Salmon: Place the salmon fillets on a cutting board and carefully slice them horizontally almost through, leaving 1/4” to 1/2” attached to create a pocket for stuffing.
  4. Season and Stuff: Brush the salmon fillets with avocado oil and sprinkle sea salt over them. Transfer them onto the parchment-lined baking sheet, then stuff each fillet with the prepared filling mixture.
  5. Bake Salmon: Bake the stuffed salmon fillets on the center rack in the preheated oven for 30 minutes or until the salmon is cooked through and flakes easily with a fork.
  6. Serve: Remove from the oven and serve the Mediterranean stuffed salmon warm alongside your favorite side dishes. Enjoy your meal!
