Marinade and Mushrooms
- 2 Tbsp olive oil
- 2 Tbsp soy sauce
- 1 Tbsp apple cider vinegar
- 1 tsp brown sugar
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tsp smoked paprika
- Freshly cracked pepper (about 10 cranks)
- 2 portobello mushroom caps (about 1/2 lb. total)

- 2 buns
- 1 cup spring mix (optional)
- 1 tomato (optional)
- 1/4 red onion, sliced into rings (optional)
- 4 Tbsp mayonnaise (optional)
Instructions
- Prepare Marinade: In a small bowl, stir together olive oil, soy sauce, apple cider vinegar, brown sugar, oregano, garlic powder, onion powder, smoked paprika, and freshly cracked pepper to create the marinade.
- Marinate Mushrooms: Remove stems from portobello mushrooms and place mushrooms gill side up in a shallow dish. Pour some marinade into the gills, flip mushrooms, and pour remaining marinade on top. Let marinate for 30 minutes, flipping occasionally.
- Preheat Grill: Heat a grill or grill pan over medium to medium-high heat until hot and ready for cooking.
- Cook Mushrooms: Add marinated portobello mushrooms to the grill and cook for about 7 minutes on each side, until mushrooms are soft and have released most of their liquid.
- Assemble Burgers: Place grilled mushrooms on buns and layer with optional toppings such as mayonnaise, spring mix, sliced tomato, and red onion rings. Serve immediately.
