Instructions
- Preheat Oven: Preheat the oven to 190C/375F and lightly grease a large baking dish to prepare for baking the peppers.
- Prepare Peppers: Slice the tops off the bell peppers, remove the seeds and membranes, then slice each pepper in half. Place the halves cut side up in the prepared baking dish.
- Cook Filling: Heat olive oil in a large non-stick pan over medium heat. Add the chopped onions and sauté for about one minute until slightly softened. Add the ground beef and cook until no longer pink, breaking it apart as it cooks. Stir in the keto taco seasoning and the diced tomatoes with their juices. Let this mixture simmer for 1 minute to combine flavors.
- Combine Filling: Remove the pan from heat, then stir in the steamed cauliflower rice and 1 cup of shredded cheese until well combined.
- Stuff Peppers: Evenly distribute the filling among the bell pepper halves in the baking dish, then evenly sprinkle the remaining 1 cup of shredded cheese on top.
- Bake: Bake the stuffed peppers for 25 minutes until the cheese is melted and bubbly and the bell peppers are tender.
- Serve: Remove from the oven and serve immediately while hot and flavorful.
