Sausage Mixture
- 1 lb. pork breakfast sausage
- ½ medium onion diced
- 2 cloves garlic minced
- 4 cups baby spinach
Egg Mixture
- 10 large eggs
- ½ cup heavy cream
- 1 ½ cups shredded cheddar cheese divided
- salt & black pepper to taste
Instructions
- Preheat and Prepare Dish: Preheat the oven to 375F. Grease a 9×13 inch baking dish to prevent sticking.
- Cook Sausage Mixture: In a sauté pan over medium-high heat, cook the diced onions until softened, about 5-6 minutes. Add the pork breakfast sausage and cook until fully cooked and no longer pink, breaking it apart with a spoon. Turn off the heat and stir in the minced garlic and baby spinach, allowing the spinach to wilt for about 2-3 minutes. Transfer the mixture to the prepared baking dish.
- Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs, heavy cream, and half of the shredded cheddar cheese. Season with salt and black pepper to taste. Pour this egg mixture evenly over the sausage and spinach in the baking dish.
- Bake the Casserole: Place the baking dish in the preheated oven and bake for 25 minutes or until the eggs are set firmly.
- Add Remaining Cheese and Melt: Remove the casserole from the oven and sprinkle the remaining cheddar cheese on top. Return to the oven and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Rest and Serve: Let the casserole rest for 10 minutes before slicing and serving to allow it to set perfectly.

- For a dairy-free version, substitute heavy cream with coconut cream and use a dairy-free cheese alternative.
- You can add other vegetables like bell peppers or mushrooms to increase the fiber content.
- Use turkey sausage for a leaner protein option.
