Description
Colcannon is a traditional Irish side dish featuring fluffy mashed potatoes combined with sautéed cabbage, spring onions, butter, cream, and fresh chives. This comforting recipe offers creamy, flavorful mashed potatoes perfect for any hearty meal.

Potatoes and Garlic
- 1 kg potatoes, peeled and cut into large chunks
- 4 garlic cloves
Vegetables and Butter
- 300 g cabbage, finely sliced
- 100 g spring onions, finely chopped (including green parts)
- 200 g butter
Other Ingredients
- 100 ml single cream
- 20 g fresh chives, chopped finely
- sea salt flakes and freshly ground black pepper, to taste
To Garnish
- a pat of butter
- sprinkling of fresh chives
Instructions
- Cook the potatoes: Boil the peeled and chunked potatoes together with garlic cloves in a large pot of cold water for 20 minutes or until the potatoes are tender when pierced with a fork.
- Saute the vegetables: While the potatoes cook, melt 100 g of butter in a small frying pan over medium heat. Add the finely sliced cabbage and chopped spring onions, and sauté for 4 minutes until softened but still vibrant.
- Drain and mash potatoes: Drain the potatoes and garlic well, keeping the garlic pieces with the potatoes, then mash them until smooth and fluffy.
- Combine greens with potatoes: Add the sautéed cabbage and spring onions along with the butter they were cooked in to the mashed potatoes, mixing thoroughly.
- Make creamy butter and cream mixture: In the frying pan used for vegetables, warm the remaining 100 g butter together with the 100 ml single cream until the butter melts and the mixture is warm.
- Add cream mixture to mash: Pour the warm butter and cream mixture into the potato and cabbage mix and combine well to create a creamy texture.
- Season and serve: Stir in the chopped fresh chives, and season generously with sea salt flakes and freshly ground black pepper. Serve immediately, garnished with an extra pat of butter and a sprinkling of fresh chives.
Notes
- Garlic: Use fresh peeled and chopped garlic cloves or substitute with 4 teaspoons of pre-prepared garlic.
- Spring Onion: Known as scallions or green onions in the USA, include the green parts for extra flavor and color.
- Cream: Single cream is equivalent to light cream in the USA.
- Oven Warming: To keep the dish warm before serving, place in an ovenproof dish and warm in the oven where it will develop a nice crispy topping.
- Use a ricer for mashing to avoid lumps and prevent the mash from becoming gummy.
- Start boiling potatoes in cold water to ensure even cooking throughout.
