Description

These traditional Irish Scones are tender, flaky, and lightly sweetened with dried currants. Perfect for breakfast or tea time, they bake golden brown and are delightful served with butter, jam, or clotted cream.

Ingredients

Scale

Dry Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons baking powder
  • 1 tablespoon salt

Butter and Fruits

  • ½ cup cold unsalted butter, cut into cubes
  • ¾ cup dried currants (or raisins)

Wet Ingredients

  • 4 large eggs, beaten
  • 1 cup heavy cream
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to ensure it reaches the right temperature for baking the scones evenly.
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, and salt. Stir well to distribute all ingredients evenly.
  3. Incorporate Butter: Add the cold cubed butter to the dry ingredients. Using a pastry cutter or two knives, blend butter into the flour mixture until it resembles coarse breadcrumbs. This step is vital for flaky scones.
  4. Add Dried Fruit: Stir in dried currants or raisins (if using) evenly into the mixture to add bursts of sweetness in every bite.
  5. Combine Wet Ingredients: In a separate large measuring cup or bowl, whisk together the beaten eggs and heavy cream until smooth.
  6. Add Wet to Dry: Slowly pour the egg and cream mixture into the dry ingredients while gently folding with a spatula. Mix just until the dough starts to form without over-mixing to avoid tough scones.
  7. Shape Dough: Turn the dough out onto a floured surface. Lightly knead just to combine, then flatten it into a smooth disc about 1 inch thick using your hands or a rolling pin.
  8. Cut Scones: Using a 3-inch round cutter, cut the dough into 12 to 16 scones. Gather and re-roll any leftover dough to cut additional scones. Place them on a baking sheet lined with parchment paper.
  9. Apply Egg Wash: Brush the tops of the scones with the beaten egg to help achieve a golden brown color when baked.
  10. Bake: Bake the scones in the preheated oven for 22 minutes or until golden brown on top. Remove from oven and transfer scones to a cooling rack to cool slightly.
  11. Serve: Enjoy the scones warm with butter, jam, and freshly clotted cream for an authentic Irish treat.

Notes

  • Cold Butter Is Key: Freezing or chilling butter before mixing ensures a flaky texture in your scones.
  • No Pastry Cutter? Use a box grater to grate the frozen butter directly into the flour mixture.
  • Do Not Over-mix The Dough: Overworking the dough will result in dense scones instead of light, fluffy ones.
  • Don’t Add Too Much Liquid: Add the cream and eggs gradually just until the dough holds together; excess liquid can make scones tough.
  • Make Ahead & Freeze: Scones freeze well baked or unbaked—perfect for quick treats anytime.
  • If using frozen fruits or berries, add them at the very end before cutting to prevent extra moisture from melting the dough.
