  • ½ teaspoon salt

Instructions

  1. Prepare the carrots: Dice the peeled carrots by cutting them on a diagonal into 1 to 1.5-inch pieces. If the carrots are thick, slice them in half lengthwise to ensure even cooking.
  2. Toss with glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Mix thoroughly to coat the carrots evenly.
  3. Roast the carrots: Preheat the oven to 425°F (220°C). Spread the glazed carrots evenly on a sheet pan. Roast for 25 minutes, tossing halfway through to ensure even caramelization. For extra caramelized edges, broil the carrots for 2 to 3 minutes at the end of roasting.
  4. Serve and garnish: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or other herbs if desired. Serve warm.
