Marinade:
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Skewers:
- 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare the marinade: Mix all the marinade ingredients together in a small bowl by combining the vegetable oil, sesame oil, garlic, ginger, dark soy sauce, and honey thoroughly.
- Marinate the chicken: Place the chopped chicken breasts in a bowl and pour three-quarters of the marinade over them. Cover and place in the refrigerator for 1 hour to allow flavors to infuse.
- Prepare skewers: Soak wooden skewers in water to prevent burning or use metal skewers. Prepare your cooking surface by heating your BBQ or griddle until very hot.
- Assemble skewers: Thread a piece of marinated chicken onto a skewer, followed by a chunk of red bell pepper, then another chicken piece and a slice of onion. Continue alternating until all chicken and vegetables are used, then discard any leftover marinade in the bowl.
- Cook the skewers: Place the assembled skewers on the hot BBQ or griddle. Cook for 8 to 10 minutes total, turning them 3 to 4 times to ensure even cooking. Brush them with the reserved marinade halfway through cooking for extra flavor. Check doneness by slicing the largest piece to confirm there is no pink inside.
- Serve: Once cooked, sprinkle the skewers with sesame seeds and torn coriander. Serve hot with a fresh salad and your choice of rice or potatoes for a fulfilling meal.

- You can marinate the chicken up to a day in advance for deeper flavor but avoid cooking it ahead then reheating, as this can dry out the meat.
- Cooked kebabs can be cooled and served cold as part of salads or wraps if preferred.
- Feel free to swap the onion and bell pepper for mushrooms, red onion, courgette chunks, or pineapple pieces for variety.
- Add a spicy kick by mixing sriracha, chili powder, or chili flakes into the marinade.
