Ingredients
Scale
Cornbread Batter
- 1/2 cup (1 stick) butter, melted
- 2/3 cup granulated sugar
- 2 Tbsp. honey
- 2 large eggs
- 1–1/4 cups buttermilk, shaken well
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
Honey Butter Drizzle
- 1/4 cup butter, melted
- 2 Tbsp. honey
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F. Lightly grease a square baking dish, approximately 8×8 inches, to prevent sticking and ensure even baking.
- Mix Batter: In a medium bowl, stir together the melted butter, granulated sugar, and honey until combined. Whisk in eggs one at a time, followed by the buttermilk. Add the cornmeal, all-purpose flour, kosher salt, and baking soda. Mix gently until the flour disappears; do not over-mix to keep the cornbread tender.
- Bake Cornbread: Pour the batter into the prepared baking dish evenly. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean, indicating the cornbread is fully cooked.
- Prepare Honey Butter Drizzle: While the cornbread bakes, combine the 1/4 cup melted butter and 2 tablespoons honey in a small bowl, stirring until well mixed for a sweet glaze.
- Drizzle and Rest: After removing the cornbread from the oven, gently poke the surface all over with a fork to allow the honey butter to seep in. Pour the honey butter mixture evenly over the top. Let the cornbread sit for 5 minutes to absorb the glaze and become extra moist.
- Serve: Slice the cornbread into 12 pieces and serve warm for the best flavor and texture. Enjoy this sweet, buttery treat alongside your favorite dishes.
Notes
- Optional add-ins include shredded cheddar cheese, fresh blueberries, minced jalapenos, fresh sweet corn kernels, chopped peaches, or chopped crispy bacon to customize the flavor.
- Do not over-mix the batter to keep the cornbread light and tender.
- Letting the cornbread rest for 5 minutes with the honey butter drizzle enhances moisture and flavor.
- Use an 8×8-inch baking dish for the best thickness and baking results.
- Make sure the buttermilk is well shaken before measuring for consistent texture.
