- 3 pounds boneless chuck roast – excess fat trimmed

- 6 fresh sprigs rosemary and thyme
- 3 bay leaves – fresh or dried

Braising Liquid
- 2 cups beef broth
- 1/3 cup balsamic vinegar – use good quality
- 1 tablespoon Worcestershire sauce
- 2 tablespoons honey
- 1 tablespoon dijon or honey mustard
Instructions
- Preheat oven: Set your oven to 325 degrees F to prepare for braising the roast.
- Season roast: Generously season the chuck roast with 1 teaspoon kosher salt and 1/2 teaspoon ground black pepper on each side.
- Sear the meat: Heat vegetable or olive oil in a large skillet over medium-high heat, then sear the roast on both sides, approximately 5-6 minutes per side, until a golden brown crust forms. Transfer the roast to a 4-quart baking casserole pan with a lid.
- Add aromatics: Arrange sliced onions, rosemary and thyme sprigs, and bay leaves around the roast in the casserole pan.
- Prepare braising liquid: Warm beef broth until hot but not boiling. Stir in balsamic vinegar, Worcestershire sauce, honey, dijon or honey mustard, minced garlic, and about 1/2 teaspoon kosher salt along with ground black pepper to taste. Mix thoroughly.
- Add braising liquid: Pour the prepared liquid over and around the roast in the pan, ensuring even coverage.
- Braise the roast: Cover the pan tightly with its lid or multiple layers of aluminum foil and place it in the preheated oven. Cook for 3 hours and 30 minutes until the meat is very tender.
- Shred and combine: Remove the roast from the oven and shred the meat with a fork, mixing it well with the flavorful juices in the pan.
- Serve: Plate the shredded roast over mashed potatoes or your favorite side dishes and enjoy your meal.

- If fresh rosemary and thyme are unavailable, substitute with 2 teaspoons Italian seasoning and 1/2 teaspoon dried rosemary.
