Ingredients
Scale
Beef and Sauce
- 2 pounds chuck roast (cut into 1-inch cubes)
- Salt and pepper (to taste)
- 2 tablespoons vegetable oil
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 4 cups beef broth (low sodium or no sodium added)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- 3 tablespoons cornstarch
- 3 tablespoons water
Noodles and Garnish
- 12 ounces egg noodles
- Fresh parsley (chopped, for garnish)
Instructions
- Season and Brown Beef: Season the beef cubes with salt and pepper. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches, browning on all sides to develop flavor. Remove browned beef and set aside.
- Sauté Aromatics: In the same pot, add chopped onion and cook until translucent. Add minced garlic and cook for an additional minute until fragrant.
- Deglaze and Simmer Beef: Pour in a bit of the beef broth to deglaze the pot, scraping up browned bits from the bottom. Return the browned beef to the pot. Add remaining beef broth, Worcestershire sauce, dried thyme, and bay leaves. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 2 hours until the beef is tender.
- Thicken Sauce: Mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the pot to thicken the broth slightly, simmering for a few more minutes until the sauce thickens.
- Cook Noodles: In a separate pot, cook egg noodles according to package instructions. Drain and set aside.
- Serve: Spoon the tender beef and thickened sauce over the cooked egg noodles. Garnish with freshly chopped parsley and serve warm.
Notes
- Use chuck roast for the best texture and flavor due to its marbling and suitability for slow cooking.
- Brown the beef in batches to avoid crowding the pot, which can cause steaming instead of searing.
- Prepare the beef and sauce ahead of time and reheat when ready; cook fresh noodles just before serving to maintain texture.
- For convenience, consider Instant Pot or Slow Cooker methods as shortcuts.
- To freeze, store only the beef and sauce separately from the noodles, which are best cooked fresh.
