- 1 pound bacon

Instructions
- Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and spray a 9 x 13 x 2-inch or 3-quart baking dish with pan spray. Set aside.
- Cook Bacon: Dice 1 pound of bacon and cook it in a large skillet over medium-high heat until most of the bacon is crisp.
- Sauté Onions and Garlic: Add 1 ½ cups diced onion to the skillet with the bacon and cook for 2-3 minutes until onions begin to turn translucent. Add 2 teaspoons minced garlic and cook for an additional 1 minute. Use a slotted spoon to remove the bacon, onion, and garlic mixture and transfer it to a paper towel-lined bowl to drain excess fat.
- Mix Ingredients: In a large bowl, combine 6 beaten eggs, 3 cups shredded hash browns, 2 cups shredded cheddar cheese, 1 cup shredded Swiss cheese, 1 ½ cups small curd cottage cheese, ½ teaspoon salt, and ¼ teaspoon ground black pepper. Stir in the bacon mixture.
- Assemble Casserole: Transfer the mixture into the prepared baking dish. Optionally, top with additional cheddar and Swiss cheeses for extra cheesiness.
- Bake: Bake in the preheated oven for 50 minutes, or until the cheese is melted and a knife inserted into the center comes out clean.
- Rest and Serve: Let the casserole sit for 10 minutes before slicing and serving to allow it to set properly.
