  • 1 cup mashed sweet potato
  • 1 cup unsweetened almond butter
  • 2 large eggs
  • ⅔ cup pure maple syrup
  • 2 tsp pure vanilla extract
  • ⅔ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon, optional
  • 1 tsp sea salt
  • 1 cup chocolate chips

Instructions

  1. Cook the sweet potato. Chop sweet potato into large chunks and boil for 20 minutes until very tender. Cool completely, then peel.
  2. Preheat oven and prepare pan. Set oven to 350 degrees F and line a 9-inch square baking pan with parchment paper.
  3. Measure mashed sweet potato. Mash cooled sweet potato and measure out 1 cup.
  4. Mix wet ingredients. Combine the mashed sweet potato, almond butter, eggs, maple syrup, and vanilla extract in a large mixing bowl; stir well until smooth.
  5. Add dry ingredients. Stir in cocoa powder, baking soda, sea salt, and cinnamon until a thick creamy batter forms.
  6. Incorporate chocolate chips. Fold the chocolate chips into the batter until evenly distributed.
  7. Pour and spread batter. Transfer batter into prepared pan and spread evenly. Optionally sprinkle extra chocolate chips on top.
  8. Bake brownies. Bake in center rack for 28 minutes until brownies reach 180 degrees Fahrenheit for cakey texture or 23 minutes for fudgy texture at 165 degrees Fahrenheit.
  9. Cool brownies. Let brownies cool completely (at least one hour) before slicing for best texture.
  10. Serve. Serve brownies as is or with a scoop of ice cream for a richer dessert experience.
