- 1 lb. 93/7 ground beef
- 1 pack of Siete taco seasoning, 1.31 oz or approximately 2 tablespoons homemade seasoning
- 12 oz. chunky salsa
- 16 oz. 2% cottage cheese
- ½ cup Mexican-style shredded cheese, plus more for topping

Instructions
- Cook the Ground Beef: Heat a large oven-safe skillet over medium heat. Add the ground beef and cook for 2-3 minutes. Then add the taco seasoning and stir well to combine.
- Finish Cooking Meat and Add Salsa: Continue cooking the meat until it is fully cooked through. Remove the skillet from the heat, then add the chunky salsa and stir to combine. Set the skillet aside.
- Blend Cottage Cheese and Shredded Cheese: In a high speed blender or food processor, add the 2% cottage cheese and ½ cup Mexican-style shredded cheese. Blend until completely smooth. If the mixture is too thick to blend, add 1-2 teaspoons of water to loosen it.
- Combine Mixture in Skillet: Pour the blended cheese mixture into the skillet with the cooked beef and salsa. Stir all ingredients together to incorporate the creamy cheese sauce evenly. Top the mixture with additional shredded cheese as desired.
- Broil the Queso: Transfer the oven-safe skillet to the oven and broil until the cheese on top is melted and turns golden brown.
- Add Fresh Toppings: Remove the skillet from the oven and garnish with fresh cilantro, sliced avocado, and chopped green onion.
- Serve: Serve immediately with tortilla chips for dipping.
Notes
- Use a thick cottage cheese with at least 2% fat content to avoid watery queso—Good Culture or Kemps brands are recommended.
- If blending is difficult, add a small amount of water (1-2 teaspoons) to help achieve a smooth consistency.
