Description

Delicious grilled sweet potato wedges seasoned with a smoky spice blend, perfect as a side dish or snack. These tender wedges have a slightly crispy exterior from the grill and are easy to prepare using a microwave and grill combination.

Sweet Potatoes

  • 2 lbs sweet potatoes (roughly 3 medium-large sweet potatoes)

Seasoning

  • 1 tbsp oil
  • 3 tsp kosher salt (Diamond Crystal)
  • ¾ tsp smoked paprika
  • ⅜ tsp garlic powder
  • ⅜ tsp onion powder
  • ⅜ tsp ground black pepper

Instructions

  1. Prepare the seasoning: Measure out the spices into a small bowl and whisk together until thoroughly combined. Set aside.
  2. Clean the sweet potatoes: Wash each sweet potato under running water, scrubbing to remove dirt. Dry with a paper towel and keep the towel damp for later.
  3. Microwave the potatoes: Poke four holes in each potato with a fork. Wrap one potato loosely in the damp paper towel and microwave on high (1100 watt) for 2 minutes. Repeat with remaining potatoes, rewetting the towel if needed.
  4. Cool and slice: Let microwaved potatoes cool slightly. Slice each potato lengthwise into halves, then cut each half into two wedges, placing them in a large flat dish.
  5. Preheat the grill: Heat the grill to 400°F. Pour oil over the wedges and sprinkle 4 tsp of the seasoning blend. Toss gently with hands to coat evenly.
  6. Grill the wedges: Place wedges flesh side down on the hot grill. Close the lid and cook for 5 minutes. Flip the wedges to the other flesh side and grill for another 5 minutes.
  7. Check doneness: Test wedges by inserting a toothpick in the center. If it passes through easily, the wedges are done. If resistance is felt, continue grilling and check every 4 minutes until tender.
  8. Serve: Remove wedges from grill and place on a platter. Let cool slightly before serving with ketchup, BBQ sauce, or on their own.

Notes

  • Be gentle when cutting the potatoes as thin wedges can break at the ends, but generally hold together well.
  • The remaining seasoning blend can be sprinkled over cooked wedges for extra flavor.
  • Using a damp paper towel during microwaving prevents the potatoes from drying out.
