Tomato Basil Topping
- 2 cups (260g) diced Roma tomatoes (5–6 tomatoes)
- 1 head of garlic (minced)
- 1 ½ tablespoon olive oil
- 1 ½ tablespoon balsamic vinegar
- 5 tablespoons (9g) fresh chopped basil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Chicken
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 4 slices mozzarella cheese
- 4–5 tablespoons balsamic glaze
Instructions
- Prepare Tomato Basil Topping: In a medium sized bowl, combine diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to allow flavors to meld.
- Prepare Chicken: If desired, pound the chicken breasts to an even thickness for uniform cooking; otherwise leave as is. Coat each chicken breast evenly with 1 tablespoon olive oil.
- Season Chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Evenly coat each chicken breast with this seasoning mixture.
- Grill Chicken: Preheat the grill to high heat. Grill the chicken breasts for 8 minutes on each side or until the internal temperature reaches 165°F and chicken is cooked through.
- Add Cheese: Once cooked, place a slice of mozzarella cheese on each chicken breast. Close the grill lid and allow the cheese to melt for 1-2 minutes.
- Rest Chicken: Remove the chicken from the grill and let it rest for about 5 minutes to retain juices.
- Assemble and Serve: Top each chicken breast with a generous spoonful of the tomato basil topping followed by a drizzle of balsamic glaze. Serve immediately.

- To pound chicken breasts evenly, place them between two pieces of plastic wrap and gently pound with a meat mallet or rolling pin.
