- 8 ounces baby bella mushrooms, sliced

- 1 (15-ounce) can full-fat coconut milk
- 2 Tbsp lemon juice
- 1 Tbsp Dijon mustard
- 1 to 2 tsp Worcestershire sauce, optional
- 2 Tbsp gluten-free all-purpose flour

- 8 ounces gluten-free spiral noodles
- Dried or fresh parsley
Instructions
- Caramelize Onions and Cook Mushrooms: Heat the avocado oil in a large skillet over medium-high heat. Add the sliced onion and sauté, stirring occasionally, until the onion begins to caramelize, about 8 minutes. Add the sliced mushrooms, minced garlic, and sea salt, stirring well. Cover and cook, stirring occasionally, until the mushrooms soften, about 3 minutes.
- Brown the Ground Beef: Push the vegetables to the side of the skillet to make room in the center. Add the ground beef to the hot area and brown it for 3 minutes on one side, then flip and brown for another 3 minutes. Use a spatula to break the meat into smaller pieces and mix it evenly with the vegetables.
- Prepare Sauce Mixture: In a bowl or measuring cup, whisk together the full-fat coconut milk, beef broth, lemon juice, Dijon mustard, Worcestershire sauce (if using), and gluten-free flour until smooth and fully combined.
- Simmer the Sauce: Pour the sauce mixture into the skillet with the beef and vegetables, stirring well to combine. Bring the mixture to a full boil, then reduce heat slightly and stir occasionally until the sauce thickens, about 8 minutes.
- Cook the Noodles: While the sauce is cooking, prepare the gluten-free spiral noodles according to the package instructions. Once cooked, drain the noodles well.
- Combine Noodles and Sauce: Transfer the drained noodles into the skillet with the thickened sauce. Stir thoroughly to coat the noodles evenly in the stroganoff sauce.
- Adjust Flavor and Serve: Taste the stroganoff and add sea salt, extra Dijon mustard, or Worcestershire sauce as desired for additional flavor. Sprinkle with dried or fresh parsley before serving.
