Ingredients
Scale
For the Steak:
- 1/4 cup soy sauce
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/2 tablespoon sriracha, or to taste
- 1 teaspoon Worcestershire sauce
- 1 1/4 pound sirloin steak, cut into 1-inch cubes
For the Potatoes:
- 3 tablespoons butter, divided
- 1 pound gold baby potatoes, quartered
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon fresh ground black pepper
- 4 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly cracked pepper, to taste
- Parsley, for garnish
- Parmesan, for potatoes, optional
Instructions
- Prepare Marinade: In a large bowl, combine soy sauce, olive oil, balsamic vinegar, sriracha, and Worcestershire sauce; whisk until fully blended.
- Marinate Steak: Add the sirloin steak cubes to the marinade, stirring gently to coat all pieces. Set aside to marinate while you prepare the potatoes.
- Cook Potatoes: Heat a large 12-inch skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Once hot and butter melted, add the quartered baby potatoes. Season with salt and pepper. Cook for about 15 minutes, stirring frequently, until potatoes are tender and golden brown. Remove potatoes from skillet and set aside on a plate.
- Prepare Skillet for Steak: Wipe the skillet clean and return to medium heat. Add remaining 2 tablespoons butter, minced garlic, dried thyme, and dried rosemary.
- Cook Steak Bites: Remove steak bites from marinade and shake off excess liquid. Add steak bites to the skillet in one layer. Cook for 1 to 2 minutes on each side, until nicely browned and seared.
- Combine Potatoes and Steak: Return the cooked potatoes to the skillet with the steak. Stir gently to combine and heat through.
- Season and Garnish: Taste and adjust seasoning with salt and freshly cracked pepper as needed. Remove from heat and garnish with chopped parsley and a sprinkle of parmesan cheese over the potatoes if desired.
- Serve: Plate the garlic steak bites with potatoes immediately while hot and enjoy.
Notes
- Use sirloin steak or any tender cut for best results with quick cooking.
- Adjust sriracha to your preferred spice level or omit for mild flavor.
- Baby potatoes can be substituted with fingerlings or small Yukon gold potatoes.
- If you prefer softer potatoes, parboil them before sautéing to reduce cooking time.
- For a dairy-free option, substitute butter with olive oil or vegan butter.
- Adding fresh herbs like rosemary and thyme enhances flavor but can be replaced with Italian seasoning.
- Serve immediately to enjoy the steak bites at their juiciest.
