- 1/4 cup whole milk
- 2 tsp minced chives
- freshly cracked black pepper, to taste

- 2 oz goat cheese, crumbled

Instructions
- Prepare the Vegetables: Heat a skillet over medium heat and add a tablespoon of olive oil. Add the sliced fingerling potatoes and season with kosher salt. Cook, stirring occasionally, until they begin to soften, about 10 minutes.
- Add Fennel and Peas: Stir in the thinly sliced fennel bulb and peas. Continue cooking for 3 to 5 minutes until the vegetables are tender yet crisp.
- Incorporate Spinach and Scallions: Add the spinach and scallions to the skillet and cook until the spinach wilts, about 2 minutes. Remove the skillet from heat.
- Mix the Eggs: In a bowl, whisk together the eggs, whole milk, minced chives, freshly cracked black pepper, and a pinch of kosher salt until well combined.
- Combine Ingredients: Pour the egg mixture over the cooked vegetables in the skillet. Gently stir to evenly distribute the ingredients.
- Add Goat Cheese: Sprinkle the crumbled goat cheese evenly over the egg and vegetable mixture.
- Cook the Frittata: Place the skillet over medium-low heat and cook without stirring for about 10 to 12 minutes, or until the edges are set and the top starts to firm but is still slightly runny on top.
- Finish under the Broiler: Transfer the skillet to a preheated broiler and broil for 2 to 3 minutes until the top is golden and fully set. Watch closely to avoid burning.
- Serve: Remove from the oven, let cool slightly, then slice and garnish with reserved fennel fronds if desired. Serve warm.
