Pasta and Soup Base
- 1 lb orecchiette pasta
- 4 cups beef stock

Meat and Cheese
- 6–8 slices bacon, chopped
- ½ cup heavy cream
- 2 cups shredded Gruyère or Swiss cheese, divided

Instructions
- Caramelize Onions: Heat olive oil in a large Dutch oven over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally and adding small splashes of water to prevent burning, until onions are deeply caramelized and soft, about 25 minutes.
- Cook Bacon: Remove caramelized onions and set aside. In the same pot, cook chopped bacon over medium heat until crispy. Drain excess grease, leaving about 1 tablespoon in the pot.
- Sauté Garlic and Combine: Return the caramelized onions to the pot and add minced garlic. Cook for 1-2 minutes until the garlic is fragrant without burning.
- Deglaze with Wine: Pour in the dry white wine, scraping the bottom of the pot to release browned bits for extra flavor. Allow the wine to reduce slightly.
- Add Pasta and Broth: Add orecchiette pasta, beef stock, fresh thyme, rosemary, and freshly ground black pepper. Stir to evenly combine and push the pasta down into the broth so it is mostly covered.
- Simmer Pasta: Bring the mixture to a low simmering boil. Cover the pot, reduce heat to low, and cook until the pasta is tender and most of the liquid is absorbed, approximately 10 minutes.
- Incorporate Cream and Cheese: Stir in the heavy cream and 1 cup of the shredded Gruyère cheese until melted and smooth.
- Add Cheese Topping: Top the pasta with the remaining Gruyère and grated Parmesan cheeses evenly.
- Finish with Melted Cheese: Cover the pot with its lid to allow the cheese to melt or place the pot under a broiler briefly until the cheese is bubbly and golden brown. Serve immediately.
