Instructions

Repeat adding water and covering several times until onions develop a deep brown, caramelized color.
  2. Season Onions: Stir in the fresh thyme, Worcestershire sauce, sugar, and vinegar. Season with salt and pepper to taste. Continue cooking for 2 to 3 more minutes to meld flavors, then transfer the onions to a bowl to cool slightly.
  3. Assemble Sandwiches: Spread a layer of caramelized onions onto each slice of bread. On two slices, place a folded slice of Swiss cheese, then add more onions, followed by another slice of cheese, more onions, and one final slice of cheese. Top with the remaining bread slices and gently press the sandwiches down to compact them.
  4. Cook Sandwiches: Preheat a large sauté pan or griddle over medium-low heat. Butter one side of each sandwich and place butter-side down on the pan. Cook until golden brown, about 4 minutes. Butter the top-facing side while cooking, then carefully flip the sandwiches. Cook until golden on the other side. To melt the cheese, add a splash of water to the pan and invert a large bowl over the sandwiches, trapping steam for 1 to 2 minutes.
